The Death certificate of 1-May-1854 confirms this is the correct date. Samuel died at 4 Simpson St. of Apoplexy Certified. The Death was registered by Harry (i.e Happy, his daughter) Shuttleworth in Attendance, Rose Hill, Great Bolton.
Note: Apoplexy is an old-fashioned medical term, which can be used to mean a neurological impairment, haemorrhage or stroke.
Samuel died before the two Bolton cemeteries (Tonge and Heaton).opened so he must be buried in a churchyard, possibly the Parish church of St Peter’s. However, it seems odd that a space was not left for Alice, who was buried with her son George.

General Notes
Samuel's father lived in Dean in 1793 where sister Maria was born, but by 1795 was in Great Bolton. Nanny's baptism of 1799 shows the family in Ainsworth parish.
Samuel lived in Halliwell. Sons Isaac and John both married at Deane (1834 and 1837) with Halliwell recorded as the abode for John.
From 1818 to after 1829, another Samuel Mather and wife Ellen was a Moulder, living at 63 (and later 67) Spring Gardens (see trade directories), then Dawes St in 1841. This was not our Samuel who was a weaver at Waterloo in 1841, although his son John did work at the Iron Works and sister Maria was at Spring Gardens in 1843.

Samuel Kay was witness to Elizabeth's wedding to John Mather in 1843. Still living in Little Bolton in 1851.
In 1841, Samuel and Alice (both 50) were at Waterloo. Four children; Alice (20), Happy (15), Samuel (15) and George (13) were with them as well as James Tyldsley (probably a lodger). At this time, there’s a population of over 613K, about 59K were cotton weavers, and 800 silk weavers. About 2,600 are involved with spinning.
In 1851, Samuel and Alice (both 60) were at 4 Simpson Street (by Waterloo Fold) with son George (21), daughter Happy Barrow (28) and granddaughter Maria Barrow (aged 7). His son Isaac was at No. 1 Simpson Street. Samuel was from "Great Bolton" and Alice from Turton.
1 May 1854, Samuel Mather of 4 Simpson Street died, aged 64. Samuel and his mother Happy (Cheetham when died) are buried at the Wesleyan Methodist, Bolton.

The Marriage Banns were recorded on 15 July 1810 - see pictures for image.
The marriage is the Bolton Parish Church of St. Peter. The marriage, entry number 252, was on 09 September 1810 by banns. The information therein states that Samuel was a weaver and of the parish of Bolton-Le-Moors, and he married Alice Mather, a spinster of the same parish. The marriage was conducted by Thomas McDougal, a curate serving at the church at that time. Both Samuel and Alice were illiterate and made their marks. Their witnesses unfortunately were William and James Orrell, who were church wardens and witnessed all of the marriages on that page.

Isaac likely older brother as only other Mather family living in Little Bolton in 1851, and baptism record confirms parents.
John's parents Samuel and Alice, confirmed by birth certificate. Happy and George confirmed by census records.
Was Samuel Mather married twice? No - They are different families. FamilySearch.org.uk has two marriages of Samuel Mather, both to an Alice.
Also the age gap between Isaac, born Bolton and the others, and common sons show they must be different families., ours from Little Bolton and the other from Bury.
There are also christening records at Mancherser Cathederal (and Collegiate Church) for a Samuel and Alice Family. They have Ellen (17-Apr-1808), William (30-Dec-1810), Alice (21-Feb-1819) and Alice (29-Sep-1822) but this must be another family if Isaac is correct (baptised 11 Jan 1811).

Older brother Isaac was baptised at Ridgway Gates in 1810. The Bolton Library baptism records for Ridgway Gates finish at 1814, and the only other records for there which have been deposited are burials records. The only John Mather I can find a baptism for is 21 Jun 1816 at Walmsley (St. Mary, Turton) a son of Samuel Mather and Alice Greenhough Mather, which is another John Mather.
For John to be a minor (under 21) when he married Ellen, he was born after 9 Oct 1816

Elizabeth was a widow by 1871 census
John Mather died 21st March 1865, while living at 114 Chroley Street, of Chronic Hepatic disease (liver disease), and Icterus (now called jaundice) - 3 weeks. He was only aged 49 at time of death.
Joseph Mather (his son), was present at the death, who was also living at 114 Chorley Street, Little Bolton.

The grave records dated 1873 are in the Inman/Foot family. The grave was bought originally for £2 by Elizabeth in 1865 and is in Tonge and Haulgh cemetery (at the back of where Fred Dibnah used to live) Ref - 2:F:29NC There are 3 inmates buried as follows:

There is no tombstone but we think it is next to the grave bought by John's brother George also in 1865 when his first wife died.
The epitaph from the tombstone is matriarch Alice Mather, Samuel’s widow, is buried here as well as George and family.
The funeral service was conducted by T.W. Handford, who was daughter Sarah Alice's brother-in-law. Grave 2.F.29
