It is likely Susan and Susannah Mather are the same parson and was baptised twice (but why wasnt Isaac?). This is because there is no death record for the Susanna baptised 1763, and Susan was also knows as Susanna when her children were baptised (Smith).
Susan Mather married Richard Smith of Deane on 7 Oct 1787. She was Susan when Thomas baptised (1797), but then Susannah for Richard (1799).
In 1841, Susan Nutter, aged 70, was at Tottington Lower End. Is this her?
There is also a burial record for Susan Mather at Turton, 27 Mar 1853, aged 83, which could be her if she hadn't married. The death record is for a Susan Nutter, aged 83, so Mather could be her maiden name. Susan Nutter was witness to the 1816 marriage of William Mather and Catherine Pilkington. However, this may be Sussanah Greenhalgh who married William Nutter in 1791.
