This burial is probably correct, as Betty is thought to be younger, closer age to William, and of child bearing age (maybe) when Holt Mather born in 1804. Betty Mather (nee Edge) is another, alive aged 82 in 1841 and died in 1842.
There is also a Betty Mather died Western Bolton in 1840, aged 71, but this Betty is about 10y too yourg.
General Notes
There's one Betty Holt in Bolton or Turton born 1752, and many others in Lancashire (Middleton, Rochdale, Oldham, Burnley) which are probably too far away. This Betty Holt (recorded as Hoult), daughter of Peter is born about 1758 in G.B. so a good match.
HOLT, widow, which may be her, was living on the Blackburn Road in 1811 and on the L.B. poor list.
Dont confuse with William Mather and Betty Beswich, married in Blackburn in 1797, and living in Pole Lane, Turton.
In 1837, Betty Mather of Turton died and was buried at Turton St Anne 10 May 1837, aged 81.
In 1841 another Betty Mather (82) nee Edge was living at Cannon Street.
AAlice and her parents were at "Goose Cote Hill, Turton, Bolton" when she was Christened. Today, this road still exists in Egerton, near Turton Golf Club.
One of the first pages of the Walmsley Chapel Meeting House (Presbyterian) is dominated by two Mather families, William+Ann and Peter+Ellin. These two families were to be the grandparents of Samuel Mather (1791-1854) and Alice Mather (1792-1879) who married 9 September 1810. Therefore Samuel and Alice (the parents of John Mather) were second cousins.

Betty and William were married in a religious ceremony on June 17th, 1779 at St. Peter's (Bolton) by J Folds and witnessed by John Knowles and Jn'o Wells.5

Alice was born on March 26th, 1792 at Goose Cote Hill and her baptism took place on July 14th, 1792 at Walmsley Presbyterian conducted by minister Thomas Davies.104

It's therefore reasonable to assume Alice was born between 1787 and 1792. One record from Bolton or Turton is at Walmsley. See image for further details.

Another possibility is Alice, D of John and Nancy of G.B., bap 1786 or Alice from Westhaughton born 1785
She died due to natural causes or old age, Natural Decay, at the age of 87 on November 16th, 1879 in Sharples. She was buried on November 20th, 1879 at Tonge-with-Haulgh Cemetery.1112
Death Notes
By 1861 and 1871, Alice was a widow and living with her daughter, Happy and family. She died after 1871 census and before 1881, probably while she was living with her daughter, Happy Shuttleworth.

For the last 20+ years of her life she recorded her birth as about 3 years older (i.e. 1789, not 26-Mar-1792), so its not surprising that this age is also 3 or 4 years out.
Alice Mather died in Bolton on 16th November 1879 at 5 Nell Street, Bolton (she was living here with Phineas, Happy and Jesse Collins) and her certified cause of death was Natural Decay. Her death was registered by her son Samuel Mather who was in attendance at the death and who also lived in Nell Street (probably No. 9)
She is buried with her son George and his family. The headstone records her death as Nov 16th 1879.

From 3-Oct-1794 to Oct-1815 the Walmsley Meeting House records are missing. However, with "Holt" as a given name it is reasonable to assume this is a son of William Mather and Betty Holt, probably baptised at Walmsley. However, Betty would be almost 50 when Holt was born.
