Sir John the Younger was born in 1310.1 Sir John the Younger's father was Sir John the Elder Carew and his mother was Joan Talbot. His paternal grandparents were Sir Nicholas De Carew and Amicia Peverell; his maternal grandfather was Sir Gilbert Talbot. He had a brother and a sister, named Nicholas and Joan. He had a half-brother named Nicholas. He died at the age of 53 on May 22nd, 1363 in "the morrow of Whitsunday".1 General Notes

Per your research, I have now determined that Sir John Carew died on the date as follows. You gave the "morrow of Whit Sunday last" in 1363 from the Inquisition.
Whit Sunday is the 7th week after Easter. Easter fell on 2 Apr in 1363 - after the Julian/Gregorian conversion problem of March 24, so it would not read 2 Apr 1362/63.
The 7th week would be Sunday 21 May 1363. The morrow or after - dictionary definition would thus be a death date of 22 May 1363 for Sir John Carew, father of Sir Leonard Carew.
