Based on burials, there are two James Mather of Little Bolton who are buried at St. Peter's Parish Church:
Died aged 50, buried 16 Jan 1823 (so born 1773)
or
Died aged 69, buried 16 Aug 1848 (so born 1779) of Little Bolton
or
Died aged 83, buried 18 Mar 1854 (so born 1771) of Great Bolton
Therefore, based on 1841 census and death born 1775 to 1779

James Mather (65, weaver) & Charlotte Mather (61) still alive in 1841 at Little Bolton Hall.
Wife Charllotte was buried at St. Peter in 1848, so would expect James to be buried there too. Abode G.B. The burial for James from G.B in 1854, aged 83 is a good match. Otherwide, died 1848, aged 69 in L.B. is better, as we know he was in Little Bolton Hall in 1841.

General Notes
James may be born Rivington as baptism date matches. However, I would expect to see a Stephen in the family. Burials of his daughters show he lived in Little Bolton. James Mather, born 25 Oct 1774, son of William Gresgon and Elizabeth Mather seems more likely, as baptised at Bank Street Unitarian.
Marriage to Ellen shows "James Mathers" is a joiner, but James Mather (65) a Weaver in 1841 married to Charlotte (61) at Little Bolton Hall.

From before 1822 to after 1841 his occupation was Weaver in Little Bolton.5
