In 1861, Joseph and Alice Knight (52 & 46) were at 63 Haydock Street, Little Bolton with Margaret Hadrman (sep-daughter) and Mary Mather (71, Mother-in-law) formerly Mally Grime.
In 1863, Joseph and Elizabeth Alice Knight were witness when Margaret Hardman married Thomas Hopkins.
In 1871, Joseph and Alice were at the Boars Head, Bolton, so it seems Alice kept her fathers business going as an Inn Keeper.
