The 27 Oct 1841 burial may be wrong record for two reasons: Betty was a widow, so not "Wife of John Mather", and the age at death should be about 75, not 64. However, there is no other death record that matchyes a Betty of Elizabeth aged 75 in 1841.
There are other John and Betty marriages 1790-1810 in Wigan (Betty Baxter & Houghton), Blackburn (Betty Walmsley), Bury (Betty Bentley), Leigh (Betty Ingham), Walmersley (Betty Bentley) that could be this death.

From 1788 to 1811 Betty was always known as "Betty", never Elizabeth.
"Elizabeth", 75, with her daugter and son-in-law William Eardley (a plumber) in 1841 at Partengton Court, Regent Road, Salford. Occupation Widow (which she most probably was) was crossed out.
The only matching Bolton death record for an Elizabeth or Betty Mather aged over 75 after 1841 is a death registered at Atherton for Betty in 1855, aged 87. The GRO Salford death register shows Betty Mather aged 92

Betty and John were married in a religious ceremony on October 5th, 1791 at St. Peter's (Bolton) by J Folds and witnessed by William Orrell and Nathanial Wright.3 They had five sons and four daughters, named John, Thomas, Thomas, John, James, Mary, Jane, Hannah and Betty.

This marriage is witnessed by Nathanial Wright which may be significant, and they had a grandson Wright Mather.

10 Years later, another John born 5 Oct is recorded as baptised with the same date of birth (i.e. 5 Oct 1798), but no baptism date. Is this the same son, baptised aged 10? Quite possibly as he was born before the parents married.
